Who isn’t looking for an easy and satisfying breakfast? I once watched a movie where Susan Sarandon had been up all night, and when she got home she was starving. She whipped up this simple breakfast, and watching her devour it made me have to try this, and I am so glad I did! You can cook this so that you have a nice oozing yolk, and the bread works as a sopping-up accompaniment, or you can cook the yolk well, and the bread still works as a great texture contrast with its crunchiness. I like adding a little shredded cheese and sliced avocado–topped with salsa when the mood hits.
1 – egg
1 – piece of bread of your liking
1 tsp of butter or olive oil
Optional: Shredded cheese, avocado, salsa, bacon, ham, etc… You can add whatever you want to dress this up and make it more substantial or sophisticated. A sprinkle of fresh herbs would be awesome.
If you look at the pictures, it’s pretty evident how to make this, but just in case you want it written out, it’s simple.
Cut a circle out of your slice of bread. Heat pan to medium heat and add your butter or oil. Crack an egg open and drop the whites and yolk into the circle of the bread. After the whites set for about 2 or 3 minutes, carefully flip the bread with the egg in it. Cook for another minute or 2, depending on how cooked through you want your yolk. If you are adding shredded cheese, put some on the bread as soon as you flip it so that it has a chance to melt. Voila!
