Egg Whites, Cheese, Avocado and Salsa Breakfast

Some people like starting their day with carbs, but this quick and easy dish is high in protein, low in fat and keeps you well fueled until lunch.  Super easy, and you can add your own touches, like some sauteed veggies.

  • Half Cup egg whites (from eggs or pasteurized in a carton)
  • Shredded cheese (cheddar is tasty)
  • Salsa
  • Half a small avocado
  • Non-stick aerosol spay (like Pam) so the eggs don’t stick or butter/olive oil

Spray a cold pan with the aerosol spray (or add butter to a warm pan) and then heat to medium high.  Add the eggs and let form a very thin layer of cooked eggs on the bottom of the pan.  Gently stir the eggs so that as the egg mixture cooks, you continuously scrape from the bottom of the pan.  This creates a delicate egg texture when done.  Just as all the liquid becomes solid, turn off the heat and sprinkle shredded cheese over the top.  Let sit for a minute to allow the cheese to melt.  In the meantime, halve your avocado, open up into two and using one of the halves, slice into sections while in the skin.  Slide eggs onto your plate, use a spoon to scoop out the avocado and layer across the top of the eggs.  Finish with salsa and a little salt, if desired.  The beauty of salsa is it usually has enough salt and flavor, so adding enough of that will bring great flavor to your eggs and avocado.  Hora de comer!
